You can set the fonts you prefer to use in Mail all the time. Choose Mail > Preferences, then click Fonts & Colors. To learn about each option, click the Help button in the pane.

You can set a system preference to automatically replace text or characters as you type in Mail. For example, if you type “teh,” it’s automatically replaced with “the.” See Replace text and punctuation in documents.

Outlook on the Mac, will use Calibri as its default message font, so as to be compatible with the default 11pt Calibri used in Outlook in Office 2007/2010/2013 on a PC. Office for Mac 2011 installs Calibri into OS X system font locations. Outlook in Office 2016 for Mac (business, $230USD), like other Office 2016 applications, has Microsoft fonts retained in each application bundle — not installed into OS X system font locations.

Without Office for Mac 2011 installed, you cannot change Apple Mail Preferences to use the Calibri Message font, and avoid the current font substitution issue that you are experiencing with the PC Outlook recipients. Either pick an Apple Mail Preferences Message font on the Mac that is known to be installed by Windows, or MS Office on the PC, or use Outlook on the Mac (which would require the more expensive Office for Mac 2011 Business version. If you change to Calibri in Apple Mail, then other mail recipients without Calibri installed will undergo a font substitution.
